Usual skipper Doris, who had been sidelined since May with a shoulder injury, joins a strong list of replacements also including Iain Henderson, Bundee Aki and Sam Prendergast.
Jack Crowley starts at fly-half ahead of Prendergast, alongside half-back partner Jamison Gibson-Park.
It will be the second time Ireland have faced New Zealand at Soldier Field in the US, after their historic first-ever win over the All Blacks in 2016.
They have since beaten the three-time World Cup winners a further four times, but have lost their last two meetings, including in the 2023 World Cup quarter-finals.
"We've been received brilliantly by the local community and there are going to be thousands of Irish supporters cheering us on which is something that will inspire the team," said Ireland coach Andy Farrell.
"The clashes with New Zealand over the years have been fantastic occasions and we're expecting more of the same on Saturday."
Leinster prop Paddy McCarthy is poised to make his Test debut off the bench.
"Paddy has made a great start to the season and his selection is testament to his impressive form," Farrell said of the 22-year-old.
"We wish him well and will all do our utmost to make it a special weekend for him and his family."
First-choice full-back Hugo Keenan and wing Mack Hansen are both missing the game through injury.
